Basil Foam Recipe

Basil Foam Recipe Summary:

A foam with buckets of flavour. A lovely way to add freshness to a dish.

Equipment Checklist:

  • Small bowl with ice water, Small saucepan

  • Stick blender or vita prep.

  • Chinois and bowl over ice

  • Siphon gun

Basil Foam Ingredients list:

Whipping cream | 300ml

Sugar | 50g

Milk | 200ml

Basil Leaves | 8g

Gelatine Leaves (4) | 8g

Method:

  1. First bloom the gelatine in ice-cold water.

  2. Lightly heat the milk, cream and sugar in a saucepan to dissolve the sugar

  3. Blend in the basil leaves then pass through a chinois and add the gelatine. (the liquid must be hot for the gelatine to melt)

  4. Chill in a bowl over ice. Once cold, add to siphon gun and charge. rest for 15-20 minutes and use when needed.
