A foam with buckets of flavour. A lovely way to add freshness to a dish.
Equipment Checklist:
Small bowl with ice water, Small saucepan
Stick blender or vita prep.
Chinois and bowl over ice
Siphon gun
Basil Foam Ingredients list:
Whipping cream | 300ml
Sugar | 50g
Milk | 200ml
Basil Leaves | 8g
Gelatine Leaves (4) | 8g
Method:
First bloom the gelatine in ice-cold water.
Lightly heat the milk, cream and sugar in a saucepan to dissolve the sugar
Blend in the basil leaves then pass through a chinois and add the gelatine. (the liquid must be hot for the gelatine to melt)
Chill in a bowl over ice. Once cold, add to siphon gun and charge. rest for 15-20 minutes and use when needed.
